Located inside Fattoria dei Barbi winery, the Barbi dairy is the guardian of our tradition and our brand, like our wines. Launched for the fist time in the mid-nineteenth century at Molino del Fiore (still part of Stefano Cinelli Colombini's estates), the Barbi dairy is the oldest and still existing cheese production in Montalcino.
Today the Barbi dairy continues its centuries-old tradition of cheeses made only from sheep's milk thanks to the hand of young cheesemakers Salvatore Soddu and Angela Zizzi and has specialized in small single-serving pecorino cheeses of 330 grams refined according to recovered traditions: we have some refined in olives paste, in walnut leaf, treated with tomato, with extravirgin olive oil, refined with maturation in ziro (the Siena earthenware jar), up to the drunk ones, with infiltration of Sangiovese based wine, those with truffles and those with pepper more typical of Montalcino.
A type of medium and long-aged cheese is also made, from December fresh ricotta will be available again, also with truffle and ravaggiolo by reservation.
All the products of the Barbi dairy are labeled with the colours of the Fattoria dei Barbi's wine labels.
